With the rack, the grid can be moved up and down between the three levels of the rack, depending on how close to the heat source the food is to be placed. In addition to giving you extra grilling space on the barbecue, you can also use the rack as a kind of heating grid, where, for example, bread can be placed without getting burnt on the hot, ordinary grill grid. The grid offers a number of different uses and is perfect for ingredients that require longer time on the grill but cannot withstand too much direct heat, such as chicken thighs. Getting chicken thighs cooked through without burning the skin can be something of an art. Stick each chicken thigh between the slots in the grid, place the grid on the top level of the rack, put a lid on the grill and let the grill do the rest. This way, the heat will circulate evenly around the entire chicken thigh, giving you a crispy and delicious result. Of course, you can cook the side dish on the regular grill rack, which now gives you plenty of room to spread out.
